Muffin Tin Mania: 20 Unique Muffin Ideas

One of the most viewed posts on this blog,  is Spaghetti Pie Meal in a Muffin as pictured in the header. It isn't the post I would have thought to have had so much traffic. It has been featured in several websites such as Chowhound Luvo, Huffington Post and The Whoot, all of which have contributed to its popularity; but I think the main reason that it has done so well, is that Muffin Tin ideas are flourishing and I can understand why, they are irresistible. I find myself often thinking of meals that I can make for the muffin tin.

Soooo …..I decided to share some of my favorite muffin tin ideas that I have saved on my Muffin and Cupcake Pinterest board; they are from a variety of websites, including this one. So get out those  muffin tins, and put them to use with some of these recipes, and change up the menu plan with a little bit of fun.

A September Recap



September has flown by for us. It has been a busy month, with plenty of catching up here in Colorado, a couple of medical emergencies involving our parents, (not to worry, all is well now), a drive to Denver,  a flight to Phoenix, followed with a drive to California, Nevada and back to Arizona, then another flight back to Colorado, a drive from Denver, and home to get our house prepared for the arrival of Nathan and Himilce and 3 grandchildren. My sweet Hubs then took another drive to Denver to pick them up at the airport, and home again and two days later took another drive to Phoenix to take his Mom down there to stay with his sister (who was having some surgery), then a flight back  to Denver, then here again…  We are in need of our Chiropractor, and a couple of extra winks of sleep;  but with that all done, and that all said, Steve arrived back today (happy sigh), the grandchildren are making the most wonderful noises in our house, the September weather is beautiful, our  son and daughter in law are a wonderful refreshment to our hearts, we are blessed and happy to take a few moments of rest and joy with our family. We have some fun things planned for the next couple of weeks, some of it outdoors, some of it involves food (of course :0)  )…. and perhaps a blog post or two will come out of our "happenings". I do have a few things ready to post… and have had them lingering in the draft file, waiting to be published, but haven't had the brain power to get them edited and finished until now; well I'm not so sure I have the brain power even now, but I do have a few free moments and am finding some restful quiet while Himilce and the  kids are doing their school work. I have a few phone pictures of some of the highlights of our trip.

We enjoyed a wonderful stay in Santa Barbara, as Dad and Steve and I visited my Dad's sister Cathie and my cousin Phil, whom I haven't seen in almost 45 years… could that really be?   We stayed in the lovely complex where she lives and explored the beautiful California country side together with Aunt Cathie as our tour guide.  The trip was definitely a highlight to us; we had such wonderful time catching up.  
Aunt Cathie was a model in the 1950's, and I had such fun going through her pictures and magazine clippings.  I took quite a few pictures of her pictures and advertisements; I want to reformat and reprint them for her,  and perhaps put them in an album or scrapbook; I am looking forward to doing that soon.


These are a few of the many clippings  that she had; they were from newspaper and magazine ads.  She was a lovely lady then and is still a lovely lady at the age of 88 (soon to be 89). 




One of the little trips we took was to the town of Solvang.
 It is a quaint little town that looks as if it came right out of Holland. 


We had a great time going through the shops, and had a delicious lunch. Pictured above is my Dad o the left, Steve in the middle, and Aunt Cathie on the right.
Loved the beach in Santa Barbara.  I realized that we have been coast to coast this last month… pretty crazy for us.  

Next stop was Nevada, where we visited my brother Dave and his wife Elvia.  We had a great visit with them.  

September is almost through as we embark upon October.  We are hoping to go out to the farms soon and pick our green chillies.  Looking forward to some Mexican recipes that are inspired by those delicious green chilies.  We are planning to take some walks and also a few field trips with Nathan and Himilce and the kids, as well as a little Colorado type of fun while we are all together.  I hope these last days of September find you all doing well. Santa Barbara Road Trip



Last week, Steve and I headed off on an adventure with my Dad.  We flew first to Phoenix, to pick up my Dad, then drove to Santa Barbara California together, to visit my Dad's sister's Cathy. Although I have seen my Aunt Cathy a couple of times in the last 30 years,  I haven't been to Santa Barbara to visit  since I was 10 (I won't tell you how long ago that was, but believe me it wasn't yesterday).  I  have happy memories of that visit when I came with my parents and my brothers, and we had a grand time with my cousins, Aunt and Uncle.   I have been enjoying connecting again with family history, and have been loving our sight seeing excursions.  This is the introduction of our little travel adventure… be back soon with a little more. Cowboy Caviar


I've been making my Hubby of few of his favorites this weekend.  This is one of them.  You probably guessed by the title of this post that this dish is called "Cowboy Caviar".  I love the name don't you?  It is one of those eat off and on through the day sorts of dishes that disappears quickly. It can be served with chips as a bean salsa or as a side dish as a bean salad and it is delicious in either capacity.  It is a hit at "get togethers", and is nice to keep in the fridge to serve to a hungry cowboy with some tortilla chips to take the edge off of a hungry appetite before dinner.  


Here's what you will need: 

1 15 oz can of Black Eyed Peas 
1 15 oz can of Black Beans, 3/4 cup Fresh Corn off the cob or two cobs of corn (Frozen is okay).
1/2 cup red onion, diced
3/4 cup chopped green bell pepper
1 1/2 cups tomatoes, diced (I like to use the little grape tomatoes…but any will work).
1 Pickled Jalapeño  pepper, diced (optional… or you can replace with green chilis).
1 ripe avocado, chopped
6 strips of bacon fried and crumbled
1 cup crumbled feta or chopped queso fresco or cheddar cheese
Cilantro for garnish.
Vinaigrette (recipe follows)
Tortilla Chips

Begin by chopping vegetables, frying bacon and cutting the corn from the cob; Reserve 1 Tablespoon of bacon grease after frying, and lightly and quickly brown the corn.  Set to the side until needed.

Drain and rinse your beans and place in a medium sized serving or mixing bowl.


Add peppers,

Tomatoes, onion and corn,

Avocado,

Cheese,

and bacon.

Stir gently.

Whisk together dressing ingredients.

Drizzle over beans and vegetables. Stir until dressing is well distributed.  


Put into a nice serving bowl.


Enjoy!


I love this as a bean salsa and so does Steve.


Num Num!


Ingredients:
1 (15 ounce) can seasoned black-eyed peas, drained and rinsed
1 (15 ounce) can seasoned or plain black beans or pinto beans drained and rinsed
3/4 cup Fresh Corn off the cob or two cobs of corn (Frozen is okay).
1/2 cup red onion, diced
3/4 cup chopped green bell pepper

4 or five slices jalapeno pepper slices, diced (optional… or you can replace with green chilis).
1 ripe avocado, chopped
6 strips of bacon fried and crumbled
1 cup crumbled feta or chopped queso fresco or cheddar cheese
Cilantro for garnish.

Dressing:
2 tablespoon olive oil
1 tablespoon white wine vinegar
1  large lime, juiced (or two small limes juiced)
1/2 tsp garlic powder
Salt and pepper to taste

Instructions:

  1. Fry up bacon and reserve 1 Tablespoon of drippings.
  2. Cut corn from the cob and brown quickly in the bacon drippings; no need to cook thoroughly, allow the corn to remain crisp.
  3. Chop remaining vegetables.
  4. Gently combine all ingredients except Cilantro.
  5. Make dressing by combining all the ingredients and whisking together well.
  6. Drizzle the dressing over the bean and vegetable mixture, then stir gently.
  7. Garnish with Cilantro.
  8. Serve with Corn Chips or as a salad/sidedish.
  9. Enjoy!

This makes a nice appetizer for a Holiday.  I'm serving a it up for our Labor Day weekend.

Home Style Teaching and Homegrown Kids

This week, my grandchildren all had their first day of Home School.  My two daughters and daughter-in-law officially started the same journey that I began thirty years ago.  They have started the second generation of Homeschooling in our family. I dug out and dusted off all of the books that I had acquired many years ago.  I decided to send a "Happy School Year" package out for each of them, with some of these goodies. I am thinking; Perhaps one of "these" will be a treasure they might want to read.  In this generation, with the almost universal presence of internet and google , there is enormous access to so much more information than we ever had (even 15 years ago), so we don't always find ourselves as interested in all the books that we used to hoard, yet I believe there is still great value in these old books, so off they go into boxes to be mailed out today.

Memories of those years came pouring in as I was going through my old books. I have missed those days very much. They are where so many of my happiest memories have come from. As a mother, I found great fulfillment in "sharing life with" and "teaching" my children. I enjoyed the fullness of having them around me, exploring all of God's amazing creation with them, and marveling as they learned to read, write, and express what they have learned.

I started Homeschooling because of the book "Home Style Teaching " by Raymond Moore.  I had ordered it through a book club years ago, when Nathan was probably 5 and Luke 3, and the girls barely 1. I didn't really know what it was about when I ordered it, I just liked the sound of it. Little did I know it would change the course of our lives, our children's lives and our grandchildren's lives. I was enthralled with this idea of teaching our children at home.  I had never heard of such a thing being done in modern history; but it all  made sense to me.  Steve liked it  as well, and we both agreed that this what we wanted to do.  It was never a big ordeal to us; isn't that funny… I mean this was really a radical idea in our world, at that time; but we didn't think of it like that; we just thought "Hey, lets do this". So we began the journey.  We devoured everything we could get our hands on about the subject.  We became book collectors (perhaps I should confess that I was already a book collector… but I became quite free in collecting more :) ). I gathered school supplies and art supplies, then I dove in.  I definitely had days that I thought perhaps it was all too much for me, but after a little break, I would be renewed, refreshed, and enthusiastic to keep going.  I learned to pray through homeschooling.  I needed the Lord more than I ever had through those years; and He was with us.  His grace strengthened us, blessed us, refreshed us, encouraged us and helped us.

There's no doubt in my mind that Homeschooling was/is a God inspired movement that had been revived from our History, and that we were very blessed to get to be a part of it.  I would do the same thing all over again.  On more than one occasion, our children have thanked us that they were home schooled.  I marvel that they would say how glad they were that we did it; that is one of the rewards that I have always cherished. Let me say that we are not a perfect family; Steve and I are not perfect, our children are not perfect, we are human with flaws and troubles just like anyone (thank goodness for the grace of God), but  I would like to encourage the future homeschool generations by saying that it is worth the work. The fruit of this labor is such good fruit.  And if you will plant good seed, you can expect to bear good fruit.  Here is some of the fruit you can expect to see in your children from the sacrifice that you make.

1.    Their character will be strong
2.    They will love to learn.
3.    They will be able to defend their faith.
4.    They will become good students.
5.    They will become self learners.
6.    They will be nice people.
7.    They will be polite.
8.    They will have good social skills and interact well with all age groups.
9.    They will become hard workers.
10.  They will be creative.
11.  They will be self motivated.
12.  They will be vessels of truth.
13.  They will be safe.
14.  They will be happy.
15.  They will be capable.
16.  They will be responsible.
17.  They will be respectful.
18.  They will be helpful.
19.  They will be self disciplined
20.  They will be able to think for themselves.
21.  They will be kind.
22.  They will be innovative.
23.  They will not be controlled by peer pressure.
24.  They will be problem solvers.
25.  They will be blessed.

Remember that seeds do not usually sprout over night, and plants do not produce fruit before they have grown mature enough, some seed sprouts more quickly than others, and some plants mature sooner than others, but  fruit only comes after a seed has been planted, nourished and watered…. then God gives the increase in the right time.

Many Blessings to you all as Fall begins.  Enjoy the moments, and don't be driven by stress, or the expectations of others.  Remember that "His" yoke is easy and His burden is light.  Let your work be in rest…. His rest.

14 Southern Recipes for Pie and a Free e-Cookbook

I have been having a bit of catch up time with Steve here in Colorado, and enjoying every moment of being with him… as well as cooking up a storm for him.  I had felt his deprivation of some lovingly made home cooked meals, over the last few months and have been working away to fill  that gap.  He has finally cried "Mercy", so now I am refocusing from the cooking of comfort foods, to the cooking of some leaner meals…. we don't have the metabolism we once had haha.  I haven't quite gotten my blogging inspiration going, so I have been away from blogland longer than I had intended.  Hope to remedy that soon.

I did have some fun news that arrived in my e-mail today so I thought I would share it with you;  I was asked to be a part of an E- Cookbook recently called 14 Southern Recipes for Pie. I was notified today, that it was completed and published. It is put together by FaveSouthernRecipes.  They have featured two of my recipes on their site in the past, (Texas Sheet Cake  and Strawberry Hand Pies), which I have greatly appreciated, and they have just finished this e-Cookbook on Pies, which has my recipe for those Little Strawberry Pies in it.  If you click the link, and scroll down to the Hand Pie Section, you will see my little pies featured there; It is the first picture on the left.  You can also down load the e-Cookbook, it is free.  If you are a "pie junky"  like I am, I'm sure you will love it.
