Freezing Carrot Puree

I wonder how many times I have bought a bag of carrots to have on hand for the little variety of ways that I like to use them only to find they have gone bad, or grown funny little yellow root hairs before they are eaten up; too many, unfortunately.   I have come up with this handy trick to use up those carrots when I realize that I am not going to be able to get them eaten before its too late:

Here's what I do: steam up a batch of them until they are nice and tender. Blend them with a hand held blender, a food processor or even a standard blender.  Pour the pureed carrots into ice cube trays and freeze.  Once frozen, remove them from the ice cube trays and put them into a freezer safe Ziplock bag.  It is best to measure out the amount that will fit into each cube, then you will know the measurement of each cube and they are ready to go into a recipe.  I mark the measurement on the ziplock bag to So I don't forget.

Pureed carrots are wonderful to use in baked goods and even for adding to sauces or soups or casseroles.  Of course,  as many of you young mothers know, they can also be used for baby food; this is a handy, healthy and inexpensive way to have it on hand when you need it.  Stay tuned for some yummy recipes using pureed carrots.

  1. Pam, you are so creative! I would have never thought about making my carrots into a puree and then freezing them for a later date. Great idea! I'll have to do this when I get some bulk carrots. I always do the same thing, I buy them and then forget to use them all up and they turn yucky rather quickly. And, that's no fun and what a waste. Sometimes our chickens eat way better than us. What other veggies can we puree the same way? And go....

  2. Great idea, Pam! I love carrots. I've been known to take a few carrots, a stalk of celery, 1/2 an onion and a potato, peel and cube them all up and saute them in a tablespoon (or so) of butter until browned and tender. I love serving them with a chicken breast done on my panini press or grill...or even a hamburger patty. Mmmmmmmmmm!

  3. I am a mother of twins and I could not live without the Wean Meister freezer pods. I loved their modern design, but they were super functional! The whole tray is silicone, including the lid, so no freezer burn. They have 9 pods, so 9 meals, each 2.5oz. These trays are BPA free and use a grade of silicone that is actually higher than the FDA grade, making them safer for babies.
