Healthy Homemade Breakfast Sausage


We are big breakfast eaters in our family.  Not the cereal and milk kind of breakfast eaters, the eggs and sausage kind of breakfast eaters.  We are that way mostly because Steve has always been that way... so I became that way, and we passed  that way to the kids... especially the last 3 kids, who in our opinion needed much protein and healthy fats added to their diet. They were in such  lack of it as they were growing up.  Their brains, hormones and, emotions were in great need of not only protein, but essential fatty acids and fat soluble vitamins from fats.  The foods we fixed that they "did" like, they ate and ate and ate of; especially the protein.  They were clearly deficient and it took many months for that to level off.

They have often bragged that they are some of the very few kids at school who actually get breakfast every morning.  That might not sound like a big deal to you, but it made us feel good... I mean not that other kids weren't  getting breakfast... but that we were appreciated by our kids for making sure they got theirs every day. All that to say.... "I've got a great sausage recipe to share with you."... now why didn't I just say that?  Well, I don't know... I guess it feels nearly impossible to just give you a recipe and not chat a little about life beforehand;   Our biggest meat source usually comes from the wonderful, organic, grassfed beef or elk or deer we have in the freezer.... with the last several years being beef, as Steve hasn't hunted in a few years. It took me a while to come up with a beef breakfast sausage that was as good to us as pork sausage.  We often found our beef sausage to be too dry and too heavy.  Here is what we came up with that did the trick.  It is a healthy and delicious breakfast sausage.

We start with half beef and half ground chicken or turkey.  The turkey or chicken gives the beef sausage that light "pork- like" consistency, the beef helps take that slightly strange ground turkey taste out of the equation. 


Put together all your spices.


And pour them into the ground meat.


Add in some healthy fat such as butter or Red Palm oil: We found adding this puts some healthy fats  into the sausage, and makes a moist, juicy,  breakfast sausage.


Mix  in.

and stir it up thoroughly.  Shape into patties.


Add a little more butter, or palm oil to the pan, because it is still going to want to stick.



Fry on medium heat until nicely brown on both sides and cook through the middle.

Homemade Breakfast Sausage

Ingredients:
2 pounds each of ground turkey (or chicken) and ground beef 
2 teaspoons dried Sage
2 teaspoons dried Marjoram
2 teaspoons dried Thyme
1 teaspoon Summer Savory
1/2 - 1 teaspoon Red Pepper flakes (depends on if you want any heat or not)
1/2 teaspoon Onion Powder
1/2 teaspoon Garlic Powder
1 teaspoon Salt (Sea Salt, Celtic Salt or Himalayan Salt)
1/2 teaspoon pepper
a pinch of Nutmeg (about 1/8 of a teaspoon)
2 Tablespoons each of butter and Red Palm Oil (this is if you have very lean meat, which we do;  Feel free to adapt this to  your own flavor and texture likes)

Instructions:
Mix together thoroughly.  Form into patties and fry on medium heat in a lightly oiled pan.  Cook until nicely browned and cooked through out.

  3. Wow Mom! Oh do I miss your sausage! I think Winston and I will be counting on eating this every morning we are there hehehe! He has inherited our breakfast love, his favorite foods are bacon and sausage :) I think I will surprise Benjamin one morning and make this. I will win the wife award if I do! I can practically smell the sausage off of my computer screen! I suddenly feel like making dinner now heheh! Love you!

  5. Looks and sounds delicious. I will be giving it a try. We are big breakfast eaters too. One of my kids all time favorites is biscuits and gravy. That sausage would fit right in. Thanks.
