Philly Cheese Steak Pie

When I was making the Peach Cream Pie  the other day, I ended up with an extra pie shell, and decided I would make dinner with it; but I was out of any good ingredients for a quiche.  The ingredients I did have were a large amount of red, green and orange peppers, onions and sliced roast beef… "Philly Cheese Steak Pie" was the result.  It came together in 10 minutes and was delicious.

 Preheat oven to 350 degrees.

Slice 3 peppers and 1 medium onion and saute lightly in olive oil.

 Prepare  a pie shell.

Fill with sautéed peppers and onions.

Sprinkle 1/2 cup shredded Provolone or Mozzarella Cheese evenly over peppers and onions.

Top with 1/2 pound sliced and chopped Roast Beef.

Add another layer of cheese (about 3/4 cup).  Cover with foil and bake in a preheated oven, approximately 40 minutes.  Remove foil and cook another 5 or 10 minutes.

  2. Dear Pam, Looks very filling and so good for you! I did have the oven on for a bit tonight, but I must confess it was so I could bake some strawberry shortcakes. My dinner was pretty and sweet, but maybe I should of had what you made instead!! I bet your husband misses all your good cooking!

  4. Pam, this looks so good, adding it to my menu for this week. I have some pie crust in the freezer, peppers, onions, from the garden and some roast beef. We love Philly Steak sandwiches.

I bought some organic raw sugar this past week and made chocolate chip cookies with it, they turned out so soft. Even my hubby commented on how nice and soft the cookies were.

    Have a wonderful week.

    Blessings,
    Cheryl

  5. This looks heavenly! Next time I turn the oven on, I'll have to try this. We have been eating light and simple since it's been soooo hot here!

And in answer to your question on my blog, the top picture of the gladiolus was in my garden and the other 2 were down town. They were very pretty and I actually took them on my phone. These smart phones are good at taking pictures...
I hope you have a great week! Hugs, Amy
