Chocolate Zucchini Cake
2 cups sugar
1 cup vegetable oil (I like to substitute coconut oil for oil whenever I can.. coconut oil gives this cake an Almond Joy like flavor, so well worth a try)
3 eggs
1 Tablespoon vanilla
1/2 cup buttermilk or milk
2 1/2 cups flour (any substitution of whole wheat or oat flour works fine for this)
1/2 cup cocoa
1 tsp baking soda
1/4 tsp baking powder
2 cups shredded zucchini
Instructions
Preheat oven to 375*. In a large bowl mix sugar, oil and eggs until well blended. Add and mix vanilla and milk. In a separate bowl, mix dry ingredients together, and then add them to wet ingredients. Stir in shredded Zucchini, and mix until well blended. Pour into a 15 X 10 inch greased baking sheet or cake pan. Bake 25 to 30 minutes.
Frosting
Ingredients1/2 cup butter softened
1 pound or 4 cups powdered sugar
1/3 cup cocoa
6 Tablespoons evaporated milk
1 Tablespoon vanilla
Mix and spread on warm cake. This is like a sheet cake. It is very moist, and is even better after it sits for a few hours.

Oh My...Pam that LOOKS so Moist and most certainly Delicious...: ) I Really like the idea of doubling the Recipe to Freeze...Now is that the Batter or a Baked Cake...And if you Freeze the Batter does it change anything in the final outcome of it being baked...Lots of ??? : )
Angelina, I froze mine after baking and frosting. I have never frozen it before... not sure if the baking powder or soda would retain their levening action... they might, it would be worth trying for a small cake.
Yum, that does look so moist. I love anything with chocolate in it.
Do you have a whole heap of zuccini's to use up, given this recipe and your fritters a few days ago? :0)
I'm a fan of baking double and freezing one too, but sometimes the second one doesn't even make it to the freezer as the first is eaten so quickly!

I made this just tonight when some friends came over, and it was delicious! No frosting, but vanilla ice cream. I liked how it wasn't overly sweet...it made it a nice compliment to the ice cream. Thanks for sharing! :)
