Mexican Lettuce Wraps


I love lettuce wraps. I often order the Asian version at a restaurant that offers them.  I decided to try a Mexican version of them, and they came out really good.  They are like a taco without the taco shell.  They are a quick and fresh dinner that the whole family will like… and if the kids prefer theirs with a taco shell… well,  just put the taco shells out and they can make them up their way.  These are Trim Healthy Mama Compliant as an S meal.














Mexican Lettuce Wraps

Ingredients:
1  head of large leafed lettuce
1  pound hamburger
1 1/2 Tablespoons chili powder
1  Tablespoon cumin Powder
1  Tablespoon onion powder
1  teaspoon garlic powder
1/2  teaspoon dried oregano
1 teaspoon dried basil
1 cup grated Cheddar or Montery Jack cheese
1 small white onion finely chopped
1 bell pepper finely chopped
4 Roma Tomatoes diced
3/4 cup black olives sliced
1 Fresh Avocados chopped
1 small bunch fresh cilantro finely chopped
Sour Cream
Lime slices


Instructions:
1.  Brown hamburger
2.  Add chili powder, cumin powder,  onion powder,  garlic powder, oregano and basil.
3.  Wash and clean lettuce, pat to dry and lay individual leaves onto a plate.
4.  Put each of the remaining ingredients into bowls.
5.  Build each wrap according to your own likes.
6.  Sprinkle with with fresh chopped Cilantro.

  2. These look really nice. Lovely and colourful meal. We are actually having chilli tonight for dinner so if I get to the shops I will look out for some large leafed lettuce! But I think my boys will probably stick to Tacos!

  3. They look delicious. I have not tried the lettuce wraps yet, need to add them to the menu planning, a nice change. I have some lettuce started now if our snow would just go away and stay gone :-) but I can see the garden now and our weather is suppose to be nice this week.

    Getting anxious to get out in the yard and garden again. Hoping we don't get any more bad weather, our school was closed Friday because of ice. Another day to make up...ugh. Warmer days are coming soon!

  4. Oh my Pammy, these look really yummy, fresh and crisp! I have this saved and will be getting everything to make these real soon. I made french dips last night and oh boy howdy, were they tasty!
