Roasted Vegetables Italiano


Basil , Oregano, Cheese, Olive Oil and Garlic, Eggplant, Zucchini… it all sounds like Italian to me.  This recipe is a variation on what I often do with just Zucchini; it goes like this; slice, put in pan, drizzle with Olive oil, fresh herbs and Italian Cheese, bake 30- 40 minutes… Italian Vegetables; yum

Vegetables such as:
Eggplant,
Zucchini
Mushrooms,
Garlic
Onion
Peppers
Brussell Sprouts
Or what ever is ripe from the garden.
2 1/2 cups parmesan and melty italian cheese such as mozzarella or provolone.
Fresh herbs such as Basil, Oregano, Parsley or Thyme,
Cook covered 40 minutes… then uncovered another 10 - 20 minutes.

  2. I love any kind of roasted veggies!! This looks so yummy!

    We decided to not plant this year. It has been a crazy summer all ready and I go to bed dog tired each night. If Barry gets a wild hair, we might do a late plant for a late harvest. They are saying our produce is suppose to double by mid July... So, we might have to plant.

    Doing good here, finishing up to shop and cleaning around the yard. Been canning some jellies, syrups and spaghetti sauces. I love our fruit trees!

    I hope you are doing well. I sure do miss you. We need to try and do lunch one day when you are in town.

  4. It is so nice to see your posts Mom! I am on a computer rather than phone, and wow, are the pictures so LOVELY! I can't get over your recipes either!
