Wholesome Carrot and Orange Waffles


I love waffles for breakfast.  They satisfy.  One of the  things I like about waffles, is that you can combine a variety of healthy ingredients, and almost always end up with a wonderful result.  Pancakes are a little trickier in that department; if you don't get your proportions just right, you end up with a dry tasteless pancake. This recipe has a few odd ingredients that you might not usually think to put in waffles: Carrots, Garbonzo beans, and Orange essential oil. How's that to raise your eyebrows? The Garbanzo beans provide protein, fiber and are low in net carbs, but you don't taste them; so don't worry, you won't notice that you have beans in your waffle at all, but your body will appreciate these healthy and wholesome ingredients.   This is another way to eat your veggies for breakfast. 









































Carrot and Orange Waffles

Ingredients:
1/2 cup pureed carrots (click here to see how to cook and puree carrots)
1/3 cup sprouted wheat flour or whole wheat flour
1 egg
1/3 cup oat bran
1/2 cup garbanzo beans cooked
1 tsp cinnamon
1/2 tsp vanilla
1/2 tsp salt
1 tsp baking powder
1/8 tsp orange essential oils(this is about 4 drops), or 1 tsp orange extract
1 tsp grated orange rind
3/4 cup buttermilk

Instructions:
1.  Blend together all ingredients with a hand held blender or process in a food processor.
2.  Spray a waffle iron with cooking spray.
3.  Pour batter into waffle iron and cook until indicator light shows done; or until waffle is lightly browned and crispy.  I left mine in longer than the "ready light" suggested, because I like them crisp, so test them to see if they are crispy before taking them out of the iron.
4. Top with butter, real maple syrup or coconut nectar syrup, and orange slices.
Enjoy!

These freeze well and crisp up wonderfully when re-heated in a toaster.

  2. Pam, this recipe definitely peaks my interest! Need to ask where you get sprouted wheat or do you make it? Need to find the orange oil and give these waffles a try.

  3. Cheryl, I order the sprouted wheat flour. I haven't tried to make it yet; although, I will say that I have thought of trying it in years past. You can order it on Amazon. I might do a post real soon on the benefits of sprouted wheat flour; but any whole grain flour will work for this.

    Have to check out Amazon for the sprouted wheat. I have never ordered food products from Amazon before.
